Why Our Olive Mill Is Key to Exceptional Quality of Our Oil?
In our state-of-the-art olive mill, we apply a dedicated cooling system during the processing of the olive paste – a key difference from conventional mills – helping to preserve delicate aromas and naturally high polyphenol levels. After extraction, the oil is stored in stainless steel tanks under argon, an inert natural gas that protects it from oxidation and preserves its freshness, stability and polyphenol content over time. As part of our sustainable approach, olive pomace is returned to the soil and used as a natural fertiliser, closing the cycle of production.
